These Ice Pops Are The Perfect Summer Treat

The summer sun while certainly welcomed can quickly make things feel a little toasty. Need something sweet and cool to withstand the summer heat? Popsicles are an excellent summertime treat. Try out the recipe for these white ice pops by Taste of Home that combine a creamy texture with tart berry flavors.


Next time you put your grocery list together, do not forget these items, as you’ll need them all to make your own popsicles at home. You might already have some or all of these ingredients in your kitchen. The portions below will yield 10 servings.

  • 1-3/4 cups of 2 percent milk, portioned
  • 1 to 2 tablespoons of honey
  • 1/4 teaspoon of vanilla extract
  • 1 cup of fresh blueberries
  • 1-1/2 cups of fresh raspberries

You will also need 10 vessels to hold the mixture during the freezing process. You could use either paper cups with popsicle sticks or store-bought popsicle molds.

Mixing the Liquid Ingredients

To incorporate the honey, it helps if you heat up the milk for just a little while, as the heat will help the honey loosen up and blend. It doesn’t need to be too hot, though, and warming the milk in a saucepan runs the risk of scalding the bottom. To avoid this, you can just quickly microwave ¼ cup of the milk, then carefully stir in the honey. After the honey is properly blended, mix in the rest of the milk along with the vanilla.

Making the White Ice Pops

Pour a portion of mixed berries into each vessel, then pour in the honey-sweetened milk after them. If you’re using paper cups, you’ll need a way to hold the popsicle sticks in place. Stretching cellophane wrap or tin foil over the top of each cup and sticking the handle through into the milk should do the trick. If you’re using popsicle molds, all you’ll have to do is top each mold with their lid. Once each vessel is filled, place them in the freezer to firm up.

Alterations and Substitutions

These pops are sure to please whenever you bring them out of the freezer, and once you’ve tried them according to this recipe, you might want to trying something slightly different the next time you make a batch. One commenter on Taste of Home’s recipe suggested adding just a bit more honey – about ¼ cup. You could also consider swapping out the regular dairy milk for almond milk for a nuttier flavor. You might even find other berries to add to or replace the recommended medley. Perhaps blackberries would be a nice change of pace, or even slices of strawberry.
