Try This Memorial Day Crispy Chicken Sliders Recipe

Ingredients
Sliders:
- 8 to 12 cornbread brioche slider buns
- 1 1/2 pounds of chicken breast cut into slider-size pieces
- A good pinch of pepper
- 3/4 cup of buttermilk
- 1/4 to 1/2 teaspoon of cayenne pepper
- 1 1/2 cups of sweet tea
- 2 teaspoons of whole wheat flour
- 1 tablespoon of kosher salt
- 3 cups of cornflake crumbs
Crispy Onions:
- Oil for frying
- 2 large white onions halved and then sliced very thin
- pinch of pepper and cayenne pepper
- 2 cups of buttermilk
- 1 tablespoon of kosher salt
- 2 cups of flour
Jalapeno Cheddar Corn Slaw:
- Pinch of salt and pepper
- 2 cups of shredded green cabbage or cabbage slaw
- 2 teaspoons of rice vinegar
- 2 ear kernels removed from the cob
- 1 lemon juiced
- 2 jalapenos seeded and chopped
- 1/2 cup of sharp cheddar cheese diced
- 1/4 cup of fresh parsley or cilantro chopped
Chipotle Honey:
- 1 chipotle chili minced
- 1/3 cup of honey warmed
Instructions
For The Sliders
Step 1: Place the chicken in a large bowl and pour sweet tea, buttermilk, and salt on top, and then toss until well mixed. Cover the chicken and place in the refrigerator overnight.
Step 2: Preheat the oven to 475°F.
Step 3: Line a baking sheet with foil and spray with olive oil.
Step 4: In a medium-sized bowl, mix together pepper, cornflake crumbs, cayenne pepper, flour, and seasoned salt.
Step 5: Remove the chicken from the refrigerator and then dip each piece in the crumb mixture, pressing gently.
Step 6: Place each piece of chicken onto the foil-covered sheet.
Step 7: Lightly spray the chicken with cooking oil, then drizzle 4 tablespoons of melted butter over the chicken.
Step 8: Bake for 10 to 12 minutes, then reduce the heat to 400°F and bake for 10-12 more minutes.
Step 9: Flip the chicken, spray it with olive oil, and then place it back in the oven for 15 to 20 minutes or until the chicken is cooked.
For The Crispy Onions
Step 1: In a large bowl, combine sliced onion and buttermilk. Let the onions sit in the buttermilk for 30 minutes to an hour.
Step 2: Mix salt, flour, a pinch of pepper, and cayenne in a medium bowl.
Step 3: Heat oil in a large pot until it reaches 375°F.
Step 4: Remove oils from buttermilk and coat them with the flour mixture. Make sure to shake off the excess.
Step 5: Carefully drop the onions in the hot oil and, using a spoon, make sure they don’t stick together. Cook for 1 to 2 minutes or until golden brown.
Step 6: Place onions on a paper towel-lined plate.
Step 7: Repeat the process until all onion slices are cooked.
For The Jalapeno Cheddar Corn Slaw
Step 1: In a bowl, mix pepper, grilled corn, salt, shredded cabbage, rice vinegar, jalapenos, lemon juice, and chopped parsley or cilantro.
Step 2: Cover and place in the fridge until ready to serve.
Step 3: Mix in cheddar cheese just before serving.
For The Chipotle Honey
Step 1: Mix honey and chipotle pepper together.
