Make This Irish Stew Pie in Honor of St. Patrick’s Day

Celebrating St. Patrick’s Day isn’t all about shamrocks, wearing green, and dishing out sneaky pinches to anyone who doesn’t. You can also celebrate the holiday by indulging in some comforting Irish cuisine. This year, try your hand at whipping up this Irish Stew Pie for St. Patrick’s Day.

Ever enjoyed a piping hot bowl of chicken pot pie? Well, Irish stew pie is a whole lot like that. It’s a delicious combination of tender lamb, potatoes, carrots, onions, and plenty of fresh herbs for seasoning. Keep reading for the full recipe.

Irish Stew Pie Ingredients

  • 1 cup of plain flour seasoned with salt and pepper
  • 1 kg of lamb shoulder diced into 1 inch thick chunks
  • 3 tablespoons of vegetable oil
  • 2 brown onions peeled and sliced
  • 300 g carrots peeled and finely diced
  • 2 tablespoons of plain flour
  • 600 ml of beef stock
  • 250 ml of water
  • 550 g potatoes diced into inch thick dices
  • ½ a tablespoon of tomato paste
  • 2 teaspoons of Worcestershire sauce
  • 2-3 sprigs of fresh thyme
  • 2 bay leaves
  • 1 handful of fresh mint leaves
  • 2 egg yolks
  • 4 tablespoons of cream
  • Extra flour for dusting
  • 2 sheets of store-bought puff pastry

Irish Stew Pie Instructions

  1. Add seasoned flour to a large bowl.
  2. Coat your diced lamb on all sides with seasoned flour, shake off the excess, then place the lamb in a second bowl.
  3. Heat a large pot over high heat, then add vegetable oil. Add your lamb one piece at a time, making sure each piece of lamb has it’s enough space to fry completely. (You may need to fry the lamb in batches.)
  4. When the lamb is browned, transfer to a bowl and set it aside.
  5. Reduce the heat to medium. If needed, add more oil then fry your onion and carrots for one to two minutes.
  6. Add two tablespoons of flour, coating the onions and carrots.
  7. Add beef stock, water, seared lamb, potatoes, tomato paste, Worcestershire sauce, thyme and bay leaves. Bring the mixture to a boil, then reduce to a simmer. Let the mixture simmer for 20 minutes stirring occasionally..
  8.  Once the mixture has thickened, add salt and pepper to taste.
  9. Add fresh mint and stir until mixed through.
  10. Pre-heat your oven to 360 degrees F
  11. In a large bowl, whisk together egg yolks and cream.
  12. Transfer filling to a pie dish. Brush the beaten egg and cream around the rim of the dish.
  13. Lightly dust a flat surface with flour.
  14. Place one sheet of puff pastry on your surface. Place the other sheet directly on top, then dust the pastry lightly again. Roll the sheets of pastry against each other until they bind together and become as thin as one sheet.
  15. Lay the puff pastry over the pie dish. Trim any excess pastry hanging over the sides. Push the edges of the pastry down on the rim of the pie dish until it sticks
  16. Bake for 40-45 minutes, then serve.
